Since when did anyone eat marshmallows for their nutritional content?. —Karpov Kinrade

While I do not have much of a sweet tooth, I do enjoy a mug of hot chocolate a few times during the winter season.

Even though I don’t love sweets like most people, I sure enjoy baking and making sweet treats for others.

I blame 2020 for my growing interest in the kitchen, ha!

I’ve also been a major label reader since then. And boy, almost every single boxed product is bioengineered which makes me sad. And yes, marshmallows were a part of said group.

Well, last winter, I discovered a way to make a healthier version of marshmallows.

A version of healthier marshmallows exists?!

Why, yes. Yes, it does!

And considering I haven’t posted a recipe in a few years, I thought now would be a good time because this will feel like a warm hug in a blog article, ha!

Healthier Marshmallows

Tired of bioengineered food products? Me too. You can now make a healthier version of marshmallows!

Prep Time 12 minutes
Keep in fridge overnight 12 hours

Ingredients

  • 1/2 cup Room temperature water
  • 1/2 cup Warm water
  • 1/4 cup Gelatin (I used the Knox brand.)
  • 1 cup Honey (You can also use maple syrup.)
  • 1/2 tsp Sea Salt
  • 1/2 tsp Vanilla

Instructions

  1. Put a 1/2 cup of warm water into a mixing bowl and mix in the 1/4 cup of gelatin.

  2. Set aside and allow the gelatin mixture to sit for about five minutes.

  3. Add 1/2 cup of room temp water, 1 cup of honey, and a 1/2 teaspoon of sea salt to a pan and bring to a slow boil. To prevent burning, make sure to whisk frequently.

  4. Begin mixing the gelatin mixture on low speed. Note, it's normal for the mixture to begin feeling like a hard putty!

  5. While mixing, slowly drizzle in the honey mixture, slowly increasing the speed.

  6. Once the honey mixture has been added, add a 1/2 teaspoon of vanilla and mix on high until it starts to look like the marshmallow fluff from a jar.

  7. Grease a glass container with some coconut oil and pour the marshmallow mixture in, making sure to spread it out evenly.

  8. Feel free to sprinkle a little powdered sugar on top before putting it in the fridge overnight.

  9. After the fluff is set, cut into squares and enjoy in your hot chocolate!

  10. Note: It should keep in an air-tight container for up to one month. However, if you sprinkle too much powdered sugar, it will get watery at the bottom of the container.

I also discovered this healthy hot chocolate mix last winter too and love it as it’s easy on the blood sugar levels.

If you make it, let me know what you think of this healthier marshmallows recipe!

I hope this recipe adds some warmth to your mugs this holiday and winter season and beyond!
