Happy #WellnessWednesday! By now, you know that I have a love for avocados. A serious love. The kind of avocado love where I wonder if there will ever be an avocado restaurant where they make everything with avocado in it. Now, there’s an idea! Ahhh… imagine avocado appetizers, various avocado salads, savory avocado dishes and desserts like avocado cookies, cake and ice cream. The crème de la crème? Avocado to-go like bagels, smoothies and shakes, macarons…you get the idea. Man, I’m drooling as I’m typing this!
My good friend, Karen and my best friend, Sarah on the other hand? They’re probably gagging and will never step foot into that kind of shop, ha! To them, avos are gross, but it’s okay. What do they know? Karen/Sarah, if you’re reading this, no hard feelings, m’kay?
Since avocados provide a source of healthy fats our bodies need, I wanted to share three yummy ways to use avocado:
Years ago, I said I would never give up butter and cheese. Well, I think this avocado butter recipe will help me take baby steps in doing that! Talk about a healthy fat, right? Who would’ve thought that one of the many ways to use avocado would be butter?
Cheese-er, cream cheese
For real, Huong? Yep. I didn’t know such a thing existed, but it does! This avocado cashew vegan cream cheese sounds too good to be true! I think this might work for those who love to snack!
Okay, so it’s not THAT unique, but come on. Did you see how avocado was used on these beet-root falafel burgers? I’ve never really liked the idea of mashed avo on hamburgers, but if I’m looking for a different flavor this might be it!
